How to make regular rocks (feuilletine) with a 2iso perforated rock plate.

Using the Perforated Rock Matrix – Step-by-Step Guide

  1. Preparing the tray

    • If needed, cover the baking tray(s) with plastic film to facilitate demolding.
  2. Preparing the rock mixture

    • Ensure that the mixture (chocolate, almonds, feuilletine, corn flakes…) is at a temperature close to 31°C. This prevents the chocolate from cooling too quickly and ensures a good texture.
  3. Filling the first side

    • Spread the rock mixture on one side of the perforated tray.
    • Any excess mixture can be easily recovered from the flat surface of the tray.
  4. Removing the rock mold

    • Gently lift the mold to release the shapes.
  5. Filling the other side

    • Repeat the process for the second side of the tray.
  6. Finalizing the process

    • Once both sides are filled, the tray is ready.
  7. Cooling

    • Place the preparation in a cool environment to allow the chocolate to crystallize and the rocks to set.

💡 Tip: A few minutes in the refrigerator is enough to achieve a perfect chocolate crystallization! 🍫❄️
