Using the Perforated Rock Matrix – Step-by-Step Guide
Preparing the tray
If needed, cover the baking tray(s) with plastic film to facilitate demolding.
Preparing the rock mixture
Ensure that the mixture (chocolate, almonds, feuilletine, corn flakes…) is at a temperature close to 31°C. This prevents the chocolate from cooling too quickly and ensures a good texture.
Filling the first side
Spread the rock mixture on one side of the perforated tray.
Any excess mixture can be easily recovered from the flat surface of the tray.
Removing the rock mold
Gently lift the mold to release the shapes.
Filling the other side
Repeat the process for the second side of the tray.
Finalizing the process
Once both sides are filled, the tray is ready.
Cooling
Place the preparation in a cool environment to allow the chocolate to crystallize and the rocks to set.
