The 2ISO granite pastry slab is a natural stone work surface designed for cooking, baking, bread making, chocolate work and confectionery. Its naturally cool surface provides an ideal workspace for rolling dough, tempering chocolate, sugar work and many other culinary applications.

With its 20 mm thickness, the slab offers excellent rigidity and long-term durability. As each slab is made from natural stone, colour and grain may vary slightly, making every piece unique.

Use and precautions

Granite naturally withstands low temperatures as well as moderate heat.

Many users place the slab in a freezer before use to obtain an extra-cold working surface. It may also be used in a warming cabinet or proving cabinet at temperatures of up to approximately 50 °C.

⚠️ Sudden thermal shocks should be avoided, such as moving the slab directly from the freezer to a high-temperature environment.

This slab is not intended for use as a cooking surface or as a pizza stone inside an oven.

Why is the black granite slab more expensive?

The black granite selected by 2ISO features a particularly fine grain. It is generally harder and more resistant, making it more difficult to machine and therefore more expensive to produce.

It is especially recommended for intensive use, confectionery work, applications involving temperature variations and for users looking for an exceptionally strong and durable slab.
