The 36.5 × 36.5 cm marshmallow pouring frame is designed for chocolatiers, pastry chefs and confectioners who want to produce handcrafted marshmallows with consistent thickness and professional-quality cutting.
Manufactured in France in our workshop, it is precision-machined from food-grade HDPE and available in heights from 2 to 20 mm, allowing you to produce marshmallows of different thicknesses.
Its 36.5 × 36.5 cm internal dimensions have been specifically designed for use with 36 cm confectionery guitars.
Like all 2iso pouring frames, the internal size is intentionally 5 mm larger than the cutting area of the guitar. When removing the frame, a small amount of product is inevitably lost as the knife passes between the frame and the preparation. This additional margin ensures that every cutting wire passes completely through the marshmallow, producing uniform pieces while minimising waste.
With external dimensions of 39.5 × 39.5 cm, the frame is compatible with standard 40 × 60 cm pastry trays as well as 2iso plastic trays. It also makes storage easier on 40 cm bakery racks and works perfectly with 2iso 3H spacer blocks.

Instructions for use
- Place the frame on a guitar sheet or stencil.
- Pour the marshmallow mixture into the frame.
- Spread evenly using an offset spatula.
- Allow the marshmallow to set.
- Carefully remove the frame.
- Turn the slab over before cutting.
Always store the frame flat to maintain its shape.

This frame is not suitable for hot poured preparations such as caramel, fruit paste or cooked sugar.
