The 2ISO intermediate ganache frame is designed for pouring chocolate, ganache and praline. It is intended for professional chocolatiers using guitar cutters with cutting widths between 33 and 34.5 cm.
The inner dimension can be selected when ordering to perfectly match your equipment.

- Outer dimensions: 37.5 × 37.5 cm
- Thickness: 2 to 20 mm
Its 37.5 cm outer dimensions make it compatible with standard 40 × 60 cm pastry trays as well as 2ISO plastic pastry trays.
It also helps optimize storage on standard 40 cm bakery racks.

Food-grade, durable and practical material
Manufactured from food-grade HDPE, this frame is:
- recyclable
- durable
- easy to clean
- manually adjustable if slight warping occurs
Its slight flexibility improves contact with the support surface and helps reduce leakage during pouring.

Not suitable for:
- caramel
- fruit paste
- cooked sugar
Instructions for use
- Place the frame on a guitar sheet or stencil.
- Pour the ganache inside.
- Allow it to crystallize.
- Remove the frame.
- Turn the slab onto the guitar cutter.
- Remove the guitar sheet.
- Cut the ganache.
