The Mini 24.5 × 24.5 cm ganache frame is designed for chocolatiers and pastry chefs who want to produce small batches while maintaining the same level of precision as larger ganache frames.
Manufactured in France in our workshop, it is precision-machined from food-grade HDPE, a material appreciated for its light weight, strength and ease of cleaning.
Available in thicknesses from 2 to 20 mm, it is ideal for producing ganache, praline and chocolate preparations at moderate temperatures.
Its external dimensions of 27.5 × 27.5 cm provide excellent rigidity while remaining perfectly suited to 24 cm chocolate guitars.
An optional divider is available.

The 24.5 × 24.5 cm internal size has been specifically designed for 24 cm chocolate guitars.
Like all 2iso ganache frames, this slight oversize is intentional. When removing the frame, a small amount of product is always lost as the knife passes between the frame and the preparation. This extra margin ensures that every cutting wire passes completely through the ganache, producing uniform chocolates while minimising waste.

Instructions for use
- Place the frame on a guitar sheet or stencil.
- Pour the preparation into the frame.
- Allow it to crystallise or cool.
- Carefully remove the frame.
- Turn the preparation over before cutting.
Always store the frame flat to maintain its shape.
Maximum operating temperature: 55°C.
For hot poured preparations such as caramel, fruit paste or cooked sugar, use a stainless steel ganache frame or a 2iso silicone frame mat.
Maintenance
Wash with a food-safe detergent.
Do not use abrasive cleaning products.
